Steph’s Stromboli

These ”mini bolis” are a hosting staple for my entire extended family. They come together quickly and are an immediate crowd favorite. Every time I go to make them, I text Steph for her recipe card, so I am quite happy to finally have a home for these gems. Enjoy!

Ingredients

1 pizza crust (~400g dough) you can use anything from scratch sourdough crust to a pillsbury pizza dough

1/3 lb sliced sandwich pepperoni

1/3 lb sliced hard salami

shredded mozzarella / pizza cheese to your preference (at least 1 cup)

banana peppers (optional)

Italian seasoning to taste

olive oil for brushing

grated parm (garnish, optional)

Instructions

  1. Preheat your oven to 400°. Line a baking sheet with parchment paper or grease with olive oil.

  2. Roll out your pizza crust, then cut into four equal rectangles. Layer the pepperoni, then cover with cheese + banana peppers to your liking, and top with salami. It doesn’t matter if you do the salami or pepperoni first, sometimes I will do all pepperoni if I don’t have any salami.

  3. Roll up each rectangle long ways, then brush with olive oil on top with grated Parmesan cheese. Bake for 10 to 15 minutes until golden.

  4. Once cooled, Slice into 1.5 inch thick pieces and top with additional parmesan cheese. We serve these on their own or with a fresh marinara sauce for dipping.
