High Protein Chicken Salad

Makes 8 sandwiches

The below recipe has all the basics to make a perfect chicken salad, but I love to add in extras when I have them on hand: consider nuts, cranberries, extra citrus, etc.

Ingredients

3 cups shredded chicken (you can prepare this in a crockpot or use rotisserie)

1/2 cup Chosen foods mayonnaise

1/4 cup plain Greek yogurt

1/4 cup chopped dill

1 chopped green onion

1 tbsp Dijon mustard

1 chopped rib of celery

Squeeze of 1 lemon

Salt and pepper to taste

Instructions

This one is quite simple and I always eyeball it! Combine all ingredients in a bowl and serve chilled. This keeps great in the fridge for lunches.
