Whipped Ricotta

Ingredients

15 oz whole milk ricotta

local honey

olive oil

squeeze of citrus

flakey salt

sourdough bread or crostini for dipping

any toppings you have on hand: toasted garlic, olives, fresh herbs, lemon, garlic, etc. (get creative, your options are endless)

Instructions

For a whipped texture, pulse ricotta with salt, honey, and a squeeze of citrus in the food processor until smooth. Alternatively, you can combine this by hand, which will maintain the ricotta’s original texture. Get creative with your toppings and serve chilled.
