Sticky Honey Garlic Meatballs over Jasmine Rice

Ingredients

makes ~ 24-30 meatballs

For the Meatballs

2 LB. organic grass-fed ground beef (85/15)

1/2 cup fresh shredded parmesan (optional)

small yellow onion, finely chopped

2 eggs

4 tbsp coconut aminos

1-2 tbsp raw honey

4 tsp parsley flakes

salt and pepper to taste

For the Sauce

1/2 cup rice vinegar

1/2 cup raw honey

2 tbsp minced garlic

4 tbsp coconut aminosw

4 tbsp water

1 tbsp flour

Miscellaneous

2 cups dry jasmine rice

4 tbsp grass-fed butter, melted

sesame seeds (garnish)

Instructions

For the Meatballs

  1. Preheat your oven to 400 degrees.
    Mix all meatball ingredients together in a large bowl, then use olive oil to roll into balls. I typically get 12-15 meatballs per pound of ground meat.

  2. Place your meatballs on a parchment lined baking sheet and bake until internal temperature reaches 160 degrees (~15 minutes).

  3. Once fully cooked, combine meatballs with honey garlic sauce, then top with sesame seeds.

For the Sauce

Combine your sauce ingredients in a sauce pan and simmer over medium heat for 4 minutes. Once thickened to a syrup-like consistency, remove from heat. Combine this sauce with your cooked meatballs.

For the Rice

Prepare 2 cups jasmine rice according to package directions (~12 minutes once boiling) , then season with garlic salt, pepper, parsley, and butter.
