Uncle Bill’s Oatmeal Cookies
Makes 3 dozen cookies
Ingredients
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
3/4 teaspoon salt
1 cup unsalted butter, room temperature (softened if you prefer a flatter cookie)
3/4 cup packed light brown sugar
1/4 cup granulated sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
3 cups old-fashioned organic rolled oats
1 1/2 cups dried cranberries (option to switch out for raisins)
1 cup white chocolate chips (optional)
Instructions
Preheat the oven to 350°. Line baking sheets with parchment paper.
In a medium bowl, whisk together flour, baking soda, cinnamon, and salt. Set aside.
In a large mixing bowl or in a stand mixer, beat together the butter and sugars on medium speed until light and fluffy, about 3 minutes. Add the eggs, one at a time, beating until just combined, then add the vanilla. Then, with the mixer on low, add the flour mixture. Finally, mix in the oats, cranberries, and white chocolate chips
Using a cookie scoop or spoon, roll into balls onto the prepared baking sheets, about 1 1/2-inches apart.
Bake one tray at a time until the cookies are lightly browned, about 10 to 12 minutes.
Let cookies cool on the pan for 2 minutes. Transfer to a wire rack to cool completely.
