Ricotta + Blackberry Crostini
Ingredients
1 baguette (recc. french bread)
1/3 cup olive oil
1 cup ricotta
1 Tbsp high quality honey
1 Tbsp lemon juice
4 oz sliced pancetta
Balsamic glaze (drizzled to taste)
4-5 large basil leaves, thinly sliced
1 container blackberries
Micro-greens (optional)
Instructions
Slice the baguette into 2 inch rounds and brush with olive oil on both sides.
Use a griddle or cast iron to grill bread on both sides until golden.
Combine ricotta, honey, and lemon in a medium bowl. Whip by hand until combined. Place in the fridge.
On the same griddle or cast iron you used for the bread, cook the pancetta for 3 minutes each side. When it's done, it will look similar to crispy bacon.
Once your toast has come to room temperature, top with ricotta, pancetta, and blackberries. Drizzle balsamic glaze and finish with thinly sliced basil.
